Slow cooker chicken recipes are the most popular of all slow cooker recipes because chicken is low in fat, not expensive to buy, and does not have such a strong flavour that it dominates the dish.

It is possible to roast a whole chicken in a slow cooker. The temperatures aren't as high as in an oven, but it will cook beautifully. There are two ways to approach this: leave the skin on and remove it afterwards, when it will come away easily, or take the skin off first.
For healthy eating, chicken is one of the lowest fat meats available, and to reduce fat further for slow cooking, I like to take the skin off first. You'll have noticed the amount of grease produced in an oven baking tray when roasting a chicken.
You can place the chicken on a metal trivet in the slow cooker, which will allow the juice to drain. Just add a small amount, (cup full), of water to the pot. Another method, which I prefer, is to lay a base of vegetables in the slow cooker and then place the chicken on those. The vegetables will cook in the chicken juice.

Never add salt if you're using stock cubes for the stock. They are already salty. Taste before serving.
